Picked up a mock tender roast, rubbed it with Emeril's Essence. Stuck a couple cloves of garlic into the meat. Floured the meat and seared all sides in a pan on the stovetop-about 6 minutes.
In a crock pot I put in 2 cans of cream of mushroom-condensed soup, an envelope of onion soup mix, a beer and ¾ cup of water and a large cut up onion. Cooked it on low for 4 ½ hours. Added celery, carrots and potatoes and turned on high for 1 ½ hours.
The flour allows the broth to thicken up.
