The other think I notice is the blueberry and strawberry don't have much taste until a higher % and then there is a fine line between "I can taste it" and "yuck"

12%-15% and only 1/2 if mixing 6%-8%
They work well together.

Strawberry or Strawberry Ripe?
Ripe is a bit better - Both mixed work very well
Smooth or a little Marshmallow smooth things out too.

I'm still thinking I need more variety in flavors. Stuff to "round out" the edges...

Find a couple of good recipes and just order the flavors you need for those. You have some good base fruit flavors now you just need to enhance them.
