Pot roast, easiest meal to make.
I use a carton and a half of that boxed beef stock
1 large onion
Small bag of carrots
2 1/2 pounds potatoes
Brown the roast on top of the stove first by searing it. (Sprinkle
salt and pepper all over it first then sear in a hot pan in about a tablespoon or so of vegetable oil)
Place all in a roasting pan. Put a lid on it or cover with tinfoil. Put into an oven at 325* for around 4 hours.
After the meat has been seared, I take it out and put a couple of tablespoons of butter in the pan and add a bit of the stock to get the good bits of the caramelized stuff from the pan. You can also do this with wine instead of the stock. Wine adds a depth of flavor. Add to everything else in the roaster.
Take roaster out of oven, transfer meat to platter/plate. Put potatoes and carrots either into separate bowls or combined into one bowl (easiest). Whatever onions are left in the liquid is fine. Place roaster on burner and turn on to high. In the meantime while it's coming to a bubble, take about
three mounded soup spoons of cornstarch put into a cup, add enough liquid to get a thick liquid. Slowly add to just bubbling liquid in roaster and stir constantly until the liquid becomes gravy. You can tell when it's cooked enough because it loses the milky look.
Transfer gravy to serving bowl.
