In the meantime, here's the soup recipe I promised.

Italian Sausage and Bean Soup


1 pound sweet Italian Turkey Sausage links
1 pound bag dried mixed white and pinto beans
2 Tablespoons Olive Oil
1 medium onion, chopped
4 carrots, diced
4 stalks celery, diced
1 large fresh tomato, chopped OR 1 can diced tomatoes w/the juice
64 oz. chicken broth
2 cloves minced garlic
2 teaspoons Italian seasoning, crushed in the palm of your hand
2 teaspoons salt (optional)**
½ cup Ditalini pasta (it’s a small, square-ish looking pasta), uncooked

Soak beans overnight (or do a fast soak: cover beans with water, bring to a boil for 5 minutes. Put a lid on the pot and let sit for an hour. Drain/rinse and proceed)

Brown the sausage links in a non-stick pan sprayed with a bit of cooking spray. Remove and let cool and then slice into thin pieces.

In the same pan, add the olive oil and sauté the onion, celery, carrots and garlic with the Italian seasoning until soft.

In a large soup pot, pour in the chicken broth and add the sautéed vegetables. Add the soaked beans, the tomato and the sliced turkey sausage.

Bring to a simmer and cook until the veggies and beans are tender. Add the pasta and cook another half hour until the pasta is done. Taste and adjust seasoning, if desired.** (Depending on the brand of chicken broth you used, it may (or may not) need a bit of salt.

Serve with a garnish of Parmesan cheese.
