The reason some use 2 mosfets is:

1) there's 2, the load is spread out over the both causing them to not heat up as hard.

2) more power supported.

Right now on my home built box. I used 2 in parallel and with a 0.4 ohm coil the mosfets don't even get hot. That's running at about 45w.

Yeah I learned that the hard way. I had just one in my mod, switch box. It got so hot on parallel that I couldn't touch it, but not too hot on the series setting. Good thing I ordered two. I pulled it apart and soldered in the second one and bam! World great. I also noticed on parallel, it took forever to fire, and now it's about normal.
