Essentially it means aging. Some juices, not all, change characteristics with age. Some taste like crap right after mixing but taste yummy a few weeks later. The opposite also applies, some taste great right away but then taste like crap after a few weeks.

For real? I didn't know this. Been talking about making my own juices and I love the sweet dessert and cereal flavours. Good to know I won't have to wait long to enjoy them.
In my opinion a Crock Pot is a waste a time. I insert my bottles in a cup of hot water (150°F Max) and refill a few times. Speeds the aging or infusion process and I am not waiting for a Crock Pot to heat up to 150°F which takes hours.
