    Aerating is done in order to eliminate alcohol. Steeping is done with the cap on. In terms of data, I will post links tomorrow evening. I'm on my phone, and all my research is on my computer at home.

    Exposing your mix to air or time oxidizes the nic. It's why many juices get darker. The flavors aren't changing; the nic is oxidizing.
