Wick and coil #3 for me on my first RDA, an IGO-L. 3mm silica and 32ga Kanthal. I decided to try building one with a higher resistance than the first two, this one measures out at 2.8Ω. It's getting easier, each build takes me less time to complete than the previous one.
Caffeine dehydrates you as well, so adding vaping to your routine probably just made it more noticeable.
Personally I probably drink a couple of liters of water a day and that keeps dry mouth away.

This video helped me the most with rebuilding the EVOD/Protank heads. Start watching at about the 16:00 mark. He used 1.5mm silica wick, but for me 3mm works perfectly and is a little easier to use.

I haven't used EkoWool but I can tell you that using a single piece of 3mm silica in my Protank heads works perfectly. No leaking and no dry hits to speak of.

I bought an IGO-L as my first rebuildable recently and had the same exact experience. My first coil wasn't bad, but my second was fantastic. I used it so much that I need to replace it already, hopefully I'll have similar results with coil #3.

They are all made of the same materials, it's just that the outer finish is different.

A sore throat can happen if your nic level is too high, but since you were smoking reds that's probably not it.
Are you drinking lots of water? Vaping will dehydrate you, so always have water nearby. That might help.
