We always sound "better" in writing - including native speakers! The think-pause makes us all sound less flip, less regional, less casual, and less crude.

I'd say you're good at that point. I don't what "fluent" means really. You can never be a "native speaker" if you haven't grown up in the culture. You can be very, very good, perfectively good accent-wise, completely conversational but still a bit "off" from time-to-time. Nothing that would...
"Thinking" in a another language is weird at first. I thought I was all good when I moved to Sweden but it took me like 6 months to really think "Swedish". It would be so much harder for someone who didn't grow up hearing the language spoken at home.
I still dream in Swedish now and then...
