    I buy crystals on ebay (after messaging the seller with the pertinent questions). I simply make my own extract with pg, same as I do with menthol, syringol, etc.. I've been making my own extracts since back when I used to process my own tobacco. (about 17 years)

    "Sharp" is mostly tannin, the stuff that gives tea, dry wines, and beer their sharpness. I could be wrong, but I think they add a little 1-pentanol, which smells like cabonation or leavening.

    1-2% to take the edge off let's say a slightly harsh tobacco or custard. I'd use a bit more (always less than 5%) for citrus and other harsh blends. BTW, what are you making?

    As far as Your turkey goes, I wouldn't worry about using a meat thermometer, either. After 30 years of cooking them, I'm sure you've got a great method/system. I can usually tell by the combined look, smell, and feel of roasted meats what temp they are within a few degrees; used to be a chef.
