I have been using the Tuscan in my clone attempts. It adds a nice raisin smell but has a slight chocolatey taste. Not as chocolatey as the black cigar/black mile type.

If I recall correctly from my chemistry days the weaker acid should be a better buffer, and give you more room for error. It would be harder to tip the scale too far to the acidic side.

Without busting out the pH probe, if the spearmint is bitter I'm thinking alkaline. You could try a couple drops distilled white vinegar per 10 mL to pull the pH down a bit.
