The best Kimchi i ever had contained "fermented" squid. Some people are put off by the thought of fermented or rotted foods but they will eat sauerkraut which is nearly the same thing. :D Im more put off by the high sodium content of many of these foods but they are typically used in smaller quantities just to season a dish. Some are pretty over powering though. Cambodian foods can be insanely strong with rotten fish pastes (Prahok).

yeah I like it. The Chinese have some weird thing.. How as bout 100 year old eggs.
