The best Kimchi i ever had contained "fermented" squid. Some people are put off by the thought of fermented or rotted foods but they will eat sauerkraut which is nearly the same thing.

Im more put off by the high sodium content of many of these foods but they are typically used in smaller quantities just to season a dish. Some are pretty over powering though. Cambodian foods can be insanely strong with rotten fish pastes (Prahok).
