I wish I had saved the email - can't find it though. I spoke with Vlad about steeping and he said that once a bottle is opened, that is sufficient to start the steeping process. He said the cap doesn't need to remain off the bottle during steeping time. I actually re-read the email several times to make sure I was understanding him correctly. So, it seems like you can just open the bottle once to let air in, and then close the bottle and put it in a dark area. If I can find the email, I'll copy and paste.
For the most part, we are talking more about OEA evaporation and getting it expedited. However, yes, you are correct about what Wlad says, but as a practical matter, someof us have found caps off works a litter better for some of his juices. Trust me, the non-aromatics should be uncapped for 48hrs...shh, don't tell Wlad, err, Wlad, skip this post.
