So I've really been getting into sub ohm vaping on a mech mod, though I don't have the most experience. But I have managed to set up a working quad coil (and tripple) on a phoenix v1! But I want to push the limits and I have some ideas for a penta coil setup. It would probably work best with 8.4 volts running through it, so i wanted to know if a batteries amp limit stays the same (say 10 amps on two high drain 18350s) or if the amp limit will increase.

Either way, if a vet wants to try it, it would involve four coils comprised of two dual coils running in series and both of these dual coils running in parallel. Then an extra coil, or even dual coil thrown in there somewhere (can you say septuple coil?). If each dual coil comes out to 4 ohms, the dual coils would be 2 ohms. And im sure a septupple coil set up this way would be > 1 ohm (quite possibly wrong here. Feel free to correct me.). Anyways, im sure 8.4 volts would be plenty to power 6 coils at once, but I want to know more about batteries before I even attempt this.

Putting two batteries in series will not increase the max current capability, but since the voltage is doubled, you should not need that. The max power is doubled due to the voltage increase, even with the same max current. See this link for more info:

Seven coils seems odd. Six or eight would make more sense in a balanced series/parallel configuration. Personally, I would not advise more than four, though. That's just getting into the realm of ridiculous power, IMO.
