A friend DIY-mixer have made some effort to make juice with good TH, one of the strangest results were as follows:
In a custard-prescription with a total of 14.7% aroma he had 2% cinnamon danish swirl, and 0.7% Lemon Lime presteeped mixed.
After checking 4 weeks later. TH were almost absent at first, but by day 10 was finely balanced,
with hint of cinnamon in place and steam had a perfectly OK TH. He was quite happy.
On day 15, he tried it on a dripper,and experienced a bitter and unpleasant acid taste,
and a TH that almost got him down on the floor.
Then tested daily for a week, and on 25.th day, juice was where he wanted it again.just fine!
But I wonder if others have experienced acid(lemon) and cinnamon mutually reinforce each other during the steeping?
