I got it from my Mom... not sure who it originated with since we do have alot of family recipe's also. As I mentioned before... you can substute chopped spinach if you wish... or just chop up your own broccoli ... carrots in it would be a nice addition also. It spices up well with some crushed red pepper also if your into that.
Sure... it's an easy one really.
1 cup of white rice
1 box of Uncle Ben's Wild Rice ( original )
1 box of chopped frozen broccoli ( ie Bird's Eye or similar )
1 can Cambell's Cheddar soup
1 can Cambell's Cream of Chicken
1 can of Milk ( ie either soup can will do )
4 1/4 cups of water
2 Tblsp of butter ( subst olive oil if you wish )
1 tsp of salt
Optional... if you want more meat in it... another small can of chicken
Makes a 9x13 Pyrex casserole
You start all of these at the same time ( more or less, timing isn't critical )
Cook the white rice according to it's directions... ie place it in 2 cups of water with 1 tsp of salt and 1 Tbsp of butter, bring to a boil and drop heat down to a simmer and cover for 15-20m until water is absorbed. Stir during cooking so rice won't stick to pan.
Cook the Uncle Ben's again according to the directions... ie place it in 2 1/4 cups of water, add spice mix and 1 Tbsp of butter, bring to a boil and reduce heat to a simmer, cover for about 25 minutes or until the water is absorbed. Stir during cooking so rice doesn't stick.
Open the box of broccoli and just follow instructions to heat it up... for Microwave... cook about 7 minutes and stir sometime about 1/2 way through. I like to put a little salt on it but not much since the soups will bring enough for flavor... still it's best to cook with a little bit.
Open and heat up the optional can of chicken.
Once everything is done... mix it all together and then pour into the 9x13 pyrex dish. Cover with foil... bake for another 30 minutes at about 350° F. Pull out of oven and let set for a bit...
I usually can't wait too long so this isn't critical, just don't burn your tongue ... lol

More importantly, why does it have yucky broccoli in it?
