cream flavor ??

What is it that is used to make the cream flavor? I also taste it in cotton candy flavors .. Is it ethyol maltol ?
I am trying to figure it out because whatever it is I am not fond of it and want to know what flavors to steer clear of..

Also is there something I can add to the juices that I have that have this flavor to tone it down some as I do not like to waste ?
