If it is an actual piezo switch, it should hold the circuit closed as long as vibration is applied.

It would be interesting to test the functionality of the switches.

Effectively, a piezo produces small amounts of electric current when vibration/pressure is applied (the reverse is also true), and i'm sure it uses this current with a relay to run the circuit.
