If you're working with fruity flavors, you could use something like TPA Sour (malic acid) or just plain citric acid dissolved into VG and add that to your liquids. As far as bacteria goes, I highly doubt you will get much if at all contamination in your liquids. I personally wouldn't really worry, as the liquid is heated to +100 degrees celsius as a part of the vaporization cycle, so no bacteria can survive those temperatures.
