blood-lollypops_lgn.jpg

blood-lollypops

Ingredients

2 cup Sugar
4 tbsp Light Light Corn Syrup
Red Food Coloring
White Popsicle Sticks

Makes about 12 lollipops

* 2 cups sugar
* 4 tbsp light corn syrup
* red food coloring
* white lollipops stick - you can find them at your local craft store.

You can even add flavor oils like peppermint or strawberry if you like.

How to make a lollipop. Vampire Blood Lollipops - Step 22
Getting the sugar melted

Bring sugar, corn syrup, and 1/4 cup water to a boil in a small saucepan, stirring until all the sugar is dissolved completely. If you have a candy thermometer it will register 300 degrees to 310 degrees (hard-crack stage), 5 to 7 minutes.

While the sugar is boiling lay out your lollipop sticks onto a silicon baking mat (I put my baking mat onto a cookie sheet to make it easier to move around and a nice hard level surface.)

How to make a lollipop. Vampire Blood Lollipops - Step 33
The ice water bath

Once you have placed your lollipop sticks down - Fill a larger pot with ice water. When your sugar mixture is ready - 300 degrees to 310 degrees, immediately set the pan into ice-water bath to stop the cooking (syrup will steam vigorously - be careful of the steam it will be very hot!); let sit about 25 seconds. Swirl pan 1 minutes more to cool - it while still be bubbling, that's OK .

How to make a lollipop. Vampire Blood Lollipops - Step 44
Pour and add the blood

Working very quickly, pour syrup onto the silicon baking sheets, forming circles (2 to 31/2 inches in diameter) and spacing pours about 3 inches apart - then press in lollipop sticks. I went very randomly - wherever there was space I made a lollipop.

The fun part

With the red food coloring - squirt a few drops in to each lollipop (I would do one at a time to make it easier to work with), using one of the lollipop sticks drags the stick through some of the food coloring to get the desired look for the "blood". I add a few more drops to the blood coagulated look.

bat-truffles_lgn.jpg

bat-truffles

Oreo Truffles
makes about 70-75 truffles
1 package Oreo Cookies
1 package cream cheese, at room temperature
1 package chocolate flavored Almond Bark
Remove cookies from the package and finely chop. (The best way is to put them in a chopper or food processor, but a blender works well, too.) Place the now cookie crumbs in a large bowl.
Remove room-temperature cream cheese from the foil and microwave for 20 seconds to make it extra creamy and easier to work with. Combine the cream cheese with the cookie crumbs and stir till well combined. Cover the bowl with plastic wrap and place in the fridge for 30 minutes.
Remove the bowl from the fridge and cover a cookie sheet with wax paper. Form the mixture into small balls (a little smaller than a gum ball) and place on the wax paper. Fill the cookie sheet with the balls and place in the freezer for 10 minutes to become firm.
While the pan is in the freezer, fill a saucepan about 1/3 full of water and heat on the stove top on medium-high. As the water begins to boil, place a glass bowl over the sauce pan and place three squares of Almond bark in the bowl to melt.

Once the chocolate is melted, begin adding the little balls to the chocolate and coating each one all around. Place the balls back on the wax paper to cool and dry. A spoon becomes very helpful for this part! When you run out of melted chocolate, rinse out the bowl and wipe it dry, then add more chocolate and begin the double boiler melting process again for the rest of the balls. Drizzle with melted white chocolate, add sprinkles or chopped pecans, or leave them as they are!
Place the prepared truffles in the fridge to keep them cool. Keep the truffles refrigerated till you need them. These little guys are going to make you very popular. :) Enjoy!

.

You will need:

Chocolate
edible eyes
mini chocolate chips
wax paper
a Ziploc bag

Draw out a few small wing shapes onto a piece of paper. Lay some wax paper over the top and tape it to the table top. Melt a small amount of chocolate according to the package and transfer to a Ziploc bag. Snip a small corner off of the bag and pipe the chocolate following the stencil. Allow to set for a few minutes, or speed up the process by tossing them into the fridge. Ok… maybe set them gently in there. Tossing could cause problems.

Next is the fun part. Melt a larger portion of chocolate. Dip each of your prepared truffles (one at a time) into the melted goodness and quickly apply the wings, eyes, and mini chocolate chips for the ears. Let them set up before handling too much.

Snickerdoodle Cookie Pizza

cq5dam.web.266.200.jpeg

ingredients
COOKIE PIZZA:

Cooking spray
2 1/2 cups flour
1 teaspoon baking soda
1 teaspoon sea salt
3/4 teaspoon cream of tartar

2 sticks unsalted butter, softened
1 cup plus 2 tablespoons sugar
3 large egg yolks
2 tablespoons pure vanilla extract
1/2 teaspoon ground cinnamon

RASPBERRY DRIZZLE:

1 pound fresh raspberries
2 tablespoons vodka

1/4 teaspoon fresh thyme leaves
Pinch kosher salt

PIZZA TOPPINGS:

2 cups chocolate ganache or store-bought chocolate fudge
3/4 cup chopped brownie
1/2 cup fresh mixed berries

1/4 cup white chocolate chips
1/2 teaspoon fleur de sel or sea salt

Directions
Preheat the oven to 350 degrees F. Line a 14-inch round baking pan with parchment and spray with cooking spray.

For the pizza: In a medium bowl, whisk together the flour, baking soda, salt and cream of tartar. Set aside.

In the bowl of an electric mixer, combine the butter and 1 cup sugar. Beat on high speed until light and fluffy, about 4 minutes. Add the egg yolks and vanilla and beat until combined. With the mixer on low speed, gradually add the flour and mix until just combined.

Transfer the dough to the prepared baking pan and spread into the pan, leaving a 1-inch gap around the edge (to allow for spreading). In a small bowl, combine the cinnamon and the remaining 2 tablespoons sugar. Sprinkle over the dough. Bake until the cookie is brown at the edges, 12 to 18 minutes. Transfer to a wire rack to cool completely.

Meanwhile, make the raspberry drizzle: Combine the raspberries, vodka, thyme and pinch of salt in a blender or food processor and pulse until smooth. Strain and store in the refrigerator until needed.

Before serving, spread the cookie with chocolate ganache, leaving about 1-inch border. Scatter the brownie pieces, berries and chocolate chips on top of the pizza. Spoon about 1/4 cup raspberry drizzle over the top (reserving remaining drizzle for another use). Sprinkle with sea salt. Serve immediately.

This recipe was provided by professional chefs and has been scaled down from a bulk recipe provided by a restaurant. The Food Network Kitchens chefs have not tested this recipe, in the proportions indicated, and therefore, we cannot make any representation as to the results.

Shrunken Heads in Cider

4017_100708_appleheads_xl.jpg

INGREDIENTS

2 cups lemon juice
2 tablespoons coarse salt
8 large Granny Smith apples
32 whole cloves
2 gallons apple cider
2 (12-ounce) cans frozen lemonade concentrate, thawed
2 cups spiced rum (optional)

STEP 1
Preheat oven to 250 degrees. Line a baking sheet with parchment paper; set aside. In a medium bowl, mix together lemon juice and salt; set aside.
STEP 2
Peel apples and cut each in half through the stem; remove seeds and core. Using a sharp paring knife, carve a face, as desired, on the rounded side of each apple half. Place apples in lemon mixture for one minute; transfer to paper towels to drain.

Pink Brain Shooter

1 brain-shaped gelatin mold
4 (3 ounce) packages peach flavored Jell-O® mix
3 cups boiling water
1 (12 fluid ounce) can evaporated milk
1 1/2 cups peach schnapps
4 drops blue food coloring
2 drops red food coloring
2 teaspoons water

Lightly oil a brain-shaped gelatin mold.
Stir the peach gelatin mix with boiling water in a bowl to dissolve the gelatin. Allow to cool to room temperature, about 20 minutes. Mix in the evaporated milk and peach schnapps; pour into the prepared mold. Refrigerate until set, 4 to 6 hours.
To decorate, dip the mold in very warm water (don't let the water enter the top of the mold) to loosen; invert the mold on a serving platter and lift to leave the brain in place. Mix blue and red food coloring in a small bowl with 2 teaspoons of water. Use a small clean paintbrush to paint the coloring into the grooves of the brain. Return the brain to the refrigerator until the food coloring sets. Serve cold.

Brains in a Jar Cake

Halloween-Brains-in-Jar1.jpg

You’ll need:
Small jars — I buy a box of half pint canning jars, but you can buy bigger ones if that’s what suits your fancy.

Seedless Raspberry Jam – Because blood doesn’t have seeds in it, mmmkay?

Pink cake – I used strawberry but you could color white batter if you prefer. I baked mine in a large jelly roll pan so it would be thin, but you could bake it in 9 x 13 or do cupcakes and cut them in half.

Frosting – I made my own using THIS easy recipe. Just add a few drops of pink and a tiny drop of black to get that pinky grey color.

Piping bag fitted with a #5 round tip (You can buy these at Michaels, Walmart or here on Amazon for about $1.)

Once your cake is cooled, cut a circle of cake the size of your jar. I used a round biscuit cutter, but you could also use another jar or a small glass.
Spoon some raspberry jam over the cake, covering the surface and making sure it reaches the edges of the jar.
Put some frosting in your piping bag. Hold the bag at a 90 degree angle and squiggle the frosting along the edges of the jar. It doesn’t have to be perfect, just squeeze and make a zig zag motion along the inside of the glass.

It should look like this. With a smaller glass or cutter, cut a piece of cake small enough to rest in the center of the “brain frosting”. Place the piece of cake in the middle.

See? That way you don’t go hurting your hand trying to pipe frosting all in the center. Holding the piping bag at a 90 degree angle again, loosely squeeze frosting all over the top of the cake. Just let it squiggle all over.
