Ingredients
Cupcakes
– 2 1/2 cups of all purpose flour
– 1 1/2 cups of sugar
– 1 teaspoon baking soda
– 1 teaspoon cocoa powder (not Dutch processed)
– 1 teaspoon fine sea salt
– 2 eggs
– 1 cup buttermilk (or 1 cup milk with 1 tablespoon lemon juice)
– 1 1/2 cups vegetable oil
– 1 teaspoon vanilla extract
– 1 teaspoon white distilled vinegar
– 2 teaspoons red food coloring (recommended: Select Natural Food Coloring)
Frosting
– 1/2 cup unsalted butter, softened
– 4 cups powdered sugar
– 1/2 teaspoon salt
– 1/3 cup whole milk
– 1 teaspoon vanilla extract
– Red and Black food coloring
Special equipment: pastry bag and large round tip
Directions
Cupcakes: Preheat the oven to 350 degrees F. Sift the flour, sugar, baking soda, cocoa powder, and fine sea salt together onto a piece of waxed paper. Mix the eggs, buttermilk, oil, vanilla, vinegar, and food coloring in a standing mixer. Using the paddle attachment, on medium speed, beat until well combined. Turn down the mixer speed and slowly add the dry ingredients, mixing until totally smooth, about 3 minutes.
Line a standard 12 cupcake tin with the liners (preferably silver). Fill the cupcake liners 2/3 full with the batter and bake until a toothpick inserted in the center comes out clean, about 20 minutes. Cool the cupcakes in the pans for 5 to 10 minutes, then remove them from the pans. Cool completely on wire racks before frosting.
Frosting: In a standing mixer, on medium speed, cream the butter until smooth. Turn down the mixer speed and slowly add the powdered sugar, salt, milk, and vanilla and mix until smooth and creamy. Add a drop each of red and black food coloring and mix into the frosting to make it a pinkish gray brain color.
Fill the pastry bag half full with the frosting, and pipe out into a squiggly pile on half of each cupcake top, then pipe the frosting in a squiggly pile on the other half of the cupcake top, making 2 brain hemispheres.

Black Death Punch

Ingredients:
1 two-liter bottle of ginger ale or a lemon lime soda
1 packet of black cherry Kool-Aid
1 12 oz. package of frozen berries, such as strawberries, blackberries, blueberries, and raspberries, thawed.
1/2 of a 750 ml bottle of Dekuyper’s Pomegranate liqueur. You can substitute this with raspberry liqueur or blackberry schnapps.
5 cups of clear rum or vodka
1 packet of Pop Rocks Candy, optional
Directions:
Chill all of the ingredients, except the Pop Rocks, overnight.
Mash the berries with a potato masher or process them in a blender for 30 seconds to create the “scabs”.
Combine ginger ale, cherry Kool-Aid, berries, and alcohol in a large punch bowl.
Pour in the Pop Rocks if you want them to make the punch crackle, pop, and snap for several minutes.

Yummy Mummy Cheese Spread


Ingredients;
2 port wine cheese logs (12 ounces each)
1 package (8 ounces) cream cheese, softened
1 tablespoon 2% milk
2 whole peppercorns
1 pimiento strip
Pastry bag and basket weave tip

Directions:

1. Cut cheese logs into pieces for mummy's head, body, arms and legs; arrange on a serving plate.
2. In small bowl, beat cream cheese and milk. Cut a small hole in the corner of a pastry or plastic bag; insert basket weave tip. Pipe rows across the mummy, creating bandages. Add peppercorns for eyes and pimiento strip for mouth. Chill until serving.

Worms for Brains

Ingredients:

8 to 10 medium sweet orange peppers
1 package (16 ounces) spaghetti
1 pound ground beef
1 jar (26 ounces) spaghetti sauce


Directions:

1. Cut tops off peppers and set aside; remove seeds and membranes. Cut a jack-o'-lantern face on one side of each pepper; set aside.
2. Cook spaghetti according to package directions. Meanwhile, in a Dutch oven, cook beef over medium heat until no longer pink; drain.
3. Drain spaghetti; add to beef. Stir in spaghetti sauce; heat through. Spoon into peppers; replace tops. Yield: 8-10 servings.

8 small navel oranges
1 small apple, chopped
1/2 cup red seedless grapes, halved
slivered almonds
whole cloves

Choose the side of each orange that will be the face.

If necessary, cut a slice off the bottom of each orange so it will rest flat.

Cut a small slice off the top of each and spoon out the pulp.

Chop pulp (if necessary) and mix with the apple and grapes; set aside.

Cut faces on orange skins and decorate with almonds and cloves.

Spoon the fruit salad into the oranges.

Salty N Sweet Popcorn Treats


Ingredients

Vegetable cooking spray
3 tablespoons vegetable oil
1/3 cup popcorn kernels
3 tablespoons butter
1 teaspoon pure vanilla extract
6 cups (12-ounces) mini marshmallows
6 fun-size Snickers, cut into 1/4-inch pieces
3 (3-inch) chocolate chip cookies, crumbled
1/3 cup chopped salted almonds,
1/2 cup orange and black M & Ms


Directions

Spray the inside of a large mixing bowl with vegetable cooking spray, and lightly spray a baking sheet. Set aside.

In a 3 quart or larger, heavy-bottomed pan, heat the oil and popcorn over medium-high heat. Cover the pan and shake gently. Cook until all the kernels have popped, about 3 minutes. Place the popcorn in the prepared bowl.

In a medium saucepan, heat the butter over low heat. Add the vanilla extract and marshmallows. Stir constantly until the marshmallows have melted and the mixture is smooth, about 5 minutes. Pour the melted marshmallow mixture over the popcorn. Using a spatula, sprayed with cooking spray, stir until the popcorn is coated. Spread the mixture over the prepared baking sheet. Sprinkle with the chocolate bar pieces, cookies, almonds and chocolate candies. Using a spatula, gently press the toppings into the popcorn. Allow the mixture to dry for 1 hour.

Break into 2-inch pieces and store airtight in a plastic container.

Serving Suggestion: Place in small plastic bags and seal with colored ribbon.

Ingredients

Rat Stew Halloween recipe
2 tablespoons olive oil
1.5 lb chicken wingettes (mini-drumsticks, for the rat legs)
1/2 lb smoked sausage links
1 onion, chopped
1 red bell pepper
4 cloves garlic
1/4 of a 6.75 oz package of maifun rice sticks (these are very thin Asian rice noodles, for whiskers. You could also substitute angel hair)
1/4 cup flour
1/4 teaspoon thyme
1/4 teaspoon pepper
1/4 teaspoon salt
1/4 teaspoon paprika
1 teaspoon basil
1 teaspoon oregano
1 teaspoon rosemary
2 tablespoons Worcestershire sauce
3 cups chicken or beef broth
1 1/2 cups red wine
Black olives, for eyes
1 8-10 lb pumpkin
Instructions

Clean out pumpkin. Do not carve it!
Preheat oven to 375 degrees Fahrenheit
Mix 1/4 cup flour, salt, pepper, paprika and thyme together. Reserve 1 1/2 tablespoons of this mixture for thickening the stew.
Heat the olive oil in a skillet. Dredge the chicken wingettes in the remaining flour mixture and brown them in the skillet with the oil.
Rat Stew Halloween recipe
While the wings brown, slice sausage into tails. To make tails, cut each sausage in half vertically. Then, cut each of these halves in half lengthwise. Cut the sausage halves into thin slices that taper to a point at one end, like rat tails. See the illustration.
Chop bell pepper into long thin strips (think entrails). Also, chop onion and mince garlic.
After chicken has browned, transfer it to the pumpkin.
Heat sausage, garlic, pepper, and onion in skillet until sausage is browned and vegetables are soft.
Put sausage and vegetables into the pumpkin with the chicken.
Rat Stew Halloween recipe
In a bowl, combine broth, wine, Worcestershire sauce, and herbs. Pour into pumpkin.
Place pumpkin on a strong baking sheet and brush outside with olive oil.
Bake for an hour and 45 minutes at 375 degrees.
Remove pumpkin. Break rice sticks into 3-4 inch long pieces and add to the pumpkin stew. If necessary, mix reserved flour mixture into a paste with a little bit of water and add to stew to thicken it.
Return the pumpkin to oven for another 15 minutes.
Remove the pumpkin from the oven, and season stew with additional salt and pepper if necessary. You can either add the black olive “eyes” directly to the stew or serve them on the side as a garnish. When serving stew, make sure to scrape some of the pumpkin meat off of the side.
Yum! Not too much rat in it. Just five or so. Enjoy!

Directions

Place cauliflower in a large glass heatproof jar or canister, positioning florets against the glass; set aside.
Fill a large pot with 8 cups water. Add both vinegars, sugar, salt, peppercorns, mustard seeds, and onions. Bring to a boil.
Carefully pour boiling liquid over cauliflower; let cool to room temperature. Cover and transfer to refrigerator. Let chill overnight or up to 1 week.

White Meringue Ghosts

6 egg whites
1/2 teaspoon cream of tartar
3/4 cup sugar
1/2 teaspoon almond extract
1 tablespoon semisweet chocolate mini morsels
String licorice (optional)

Beat egg whites and cream of tartar at high speed with an electric mixer until foamy. Gradually add sugar, 1 tablespoon at a time, beating until stiff peaks form and sugar dissolves (2 to 4 minutes). Add extract; beat until blended.
Spoon mixture into a zip-top plastic bag; snip a small hole in 1 corner, and pipe mixture into ghostly shapes on parchment paper-lined baking sheets. Add mini morsels for eyes. If desired, cut licorice into 2-inch pieces. Firmly pinch ends together. Insert 1 in top of each ghost for a hanger.
Bake at 200° for 2 hours. Turn oven off, and let meringues stand in closed oven with light on 8 hours.

12 (10- to 12-inch-long) lollipop sticks
1 (24-ounce) package Chocolate Flavor MoonPies
1 (14-ounce) package orange candy melts
1 zip-top plastic bag
Scissors
Wax paper
Halloween candies
Halloween sugar cake decorations
Decorator icing
Ribbon (optional)
Step 1: Insert 1 lollipop stick 2 to 3 inches into marshmallow center of MoonPie.
Step 2: Microwave candy melts in a glass bowl at MEDIUM (50% power) 1 minute or until melted, stirring once; spoon into plastic bag, and seal.
Step 3: Snip a small hole in 1 corner of the bag; pipe melted candy around where stick meets MoonPie to secure. Lay flat on wax paper, and let stand until firm.
Step 4: Pipe fun border of melted candy around edges. Attach candies and/or cake decorations with decorator icing. Tie ribbons around tops of sticks, if desired.

Pizza Rats


1 tablespoon tomato sauce (or spaghetti sauce or pizza sauce)
1 English muffin, split
3 green olives (stuffed with pimientos or black olives)
1 scallion, green part only, cut in slices
1 cheese slice (or 1/4 cup shredded cheese or cheese sticks)

Heat oven(or toaster oven) to 350*F.

Using a pizza cutter, cut an English muffin half into a triangle. Spread a tablespoon tomato sauce onto the wedge.

Set round olive slices in place for eyes and a nose. If using black olives, add round slices of green onion for pupils. Lay strips of cheese(I use shredded cheese. If using cheese sticks, pull apart and use strings) across muffin for rat fur.

Bake for about 10 minutes, or until cheese is melted and the muffin is toasted.

Serve and enjoy!

Strawberry Ghosts Recipe

30 fresh strawberries
8 ounces white baking chocolate, chopped
1 teaspoon shortening
1/8 teaspoon almond extract
1/4 cup miniature semisweet chocolate chips

Directions

Wash strawberries and gently pat with paper towels until completely dry. In a microwave-safe bowl, melt white chocolate and shortening at 50% power; stir until smooth. Stir in extract.
Dip strawberries in chocolate mixture; place on a waxed paper-lined baking sheet, allowing excess chocolate to form the ghosts' tails. Immediately press chocolate chips into coating for eyes. Freeze 5 minutes.
In microwave, melt remaining chocolate chips; stir until smooth. Dip a toothpick into melted chocolate and draw a mouth on each ghost. Refrigerate leftovers. Yield: 2-1/2 dozen.

Big-Eyed Alien

Prepare the vanilla or chocolate cupcake recipe. Spread each cupcake with a thin layer of meringue buttercream tinted with a few drops of green food coloring. For the small eye, attach a mini marshmallow and create a pupil by painting on melted chocolate (microwave 1/2 cup chocolate chips for 1 minute). For the large eye, push the chocolate chip, tip down, into a regular-size marshmallow, then cut Gummi tape for an eyelid. For teeth, place 5 mini marshmallows along the bottom of the cupcake.
