It needs more pineapple than what I was getting with pina colada but then I lose the coconut by adding pineapple to the mix so I added a little sweet coconut from capella and boom too much coconut I gotta find that happy medium somewhere

Is this before or after steeping? The pineapple may be there as an undertone for right now. Too much pineapple gets blecchh!!! Let it steep a week and then try it. Otherwise I would add a little brown sugar extra to the mix, leave out the pina colada, use Caps sweet Coconut and then Capellas Golden Pineapple in addition to whatever you are using for that cake flavor.
If the coconut still seems too strong you can try TFA Coconut Candy... More like the Mounds bar Coconut, I use that and the Coconut Extra for different flavors. The extra is a little like a coconut smoothie

I started with the Cap Golden Pineapple and the Cap sweet coconut and just couldn't get it to be anything near the flavor I was looking for, on a whim I got a little bottle of the pina colada and worked into the recipe. It's so much closer now and it does have TFA Brown Sugar Extra in it, has from the beginning. I think its just a matter of tweaking the pineapple and coconut till I hit the right ratio. Oh yeah and this is after a two week steep straight out of the gate it was not so good. I pretty much knew it would be seems pineapple always needs to take a nap before it's ready to play

What percentages are you doing on each? I am waiting for you to get this and share the recipe. I love me some Pineapple upside down cake. So if you use the Pina Colada with the Coconut you say that is too much coconut but how is the pineapple with the pina colada?
