I was a mixolagist by trade for a number of years, the Margarita is the king of cocktails and my personal favourite.
Personal fav. Old Fashioned using home made simple syrup with equal parts brown sugar to water boiled with a few cloves. I use 2 cloves per 500ml. One bar spoon is all that is needed. Few dashes of Berg & Hauck old time Aromatic bitters and 45ml of your favorite bourbon or rye whisky. Lightly stirred in a mixing glass filled with ice, allowing about 2 - 5mm of rise for the perfect dilution. Pored over an ice rock (cause cubes are for soda’s), fresh orange peel squeezed over top to release the oils, NEVER lit on fire, little wipe around the rim and up the side of the glass and garnish. The perfect cocktail.
Never in the professional trade but practice mixology at home. Think I need a drink.
