If you decide to go the DIY route your best bet will be to get a "base" to your liking before adding a tobacco flavor.
A base being, per your description quoted below, of Goodejuice's Ice Cold Menthol, a menthol flavor (and/or a mint, spearmint, peppermint) and a cooling agent (WS-23 or koolada).
its more of an ice menthol, very clean tasting, a little on cold side
Cooling agents. Some people do not like WS-23 and likewise some don't like Koolada. It comes down to personal preference (as with everything in DIY). You will likely want to try both to see which one suits you best.
There are menthol, mint, spearmint and peppermint flavors made by several different companies. Finding the ones that best suit you will take time and patience on your part.
Goodejuice's Ice Cold Menthol could be as simple as a menthol and a cooling agent (WS-23 or Koolada). But, it could also be more complex and use one or more of the following... mint, spearmint, peppermint.
The only way you will know for certain is to start with something very simple as a base (menthol + cooling agent). Try it, if it's to your liking great. If not experiment with adding one of the previously mentioned flavors.
It sounds like you don't like heavily flavored juices. With DIY it is always wise to start low with percents with every flavor. Start too high and you will end up tossing it. By starting low you can always add more flavoring as needed.
One of the best place to purchase flavors, and used by nearly everyone doing DIY on ECF, is Bull City Flavors.

I can't help with tobacco flavors as I do not like those. Bull City Flavors carries many tobaccos. You might want to ask for help with tobaccos in the 'Random DIY mixing and More' thread.
