PG generally equates to more
throat hit, less vapor, flavoring comes through cleaner.
VG equates to less TH, more vapor/"lung hit", tends to mute flavoring a bit (though a good
juice vendor compensates for this appropriately). VG is much thicker than PG, so vendors often cut it with a few % alcohol or distilled water.
Some people are sensitive to PG, so need high VG % or even zero PG in some cases.
Some people don't like VG, there are periodic complaints about it leaving an oily coating in the mouth.
For newer people 80% PG and 20% VG (80/20) is a pretty common sweet spot -- good throat hit and decent vapor. Over time many people vary the mix they use.
