I don't know about any wheel potentiometers, but they should be simpler than digital pots, as would any analog potentiometer.

That site has just about any component that you might need. You can find digital pots there. You'd want to refine the search for 10k ohm ones, and decide how much resolution that you want. I'd probably look for somewhere between 64 and 256 step ones, with non-volatile memory.
You won't need much power rating for them, so that shouldn't be an issue. I'd look for
through-hole mounted ones, as they will be fairly easy to work with. Be sure to get linear-taper, so that the voltage adjustment will be uniform across it's range.
They have links to the datasheets for the components that they sell on each item's page, and those will tell you how to wire them. Not all datasheets are as helpful as others might be, so I'd look for one with a decent sheet.
The digital ones have different ways of operating, and the datasheet will describe that as well. Any normally open switch would usually do as the control switches.
