I don't know if you're aware, but SS
coils can be used in both Power Mode and Temperature Control mode unlike all other wires which must be used in their specific mode (ie - Kanthal, Nichrome = Power Mode only - Nickel, Titanium = TC Mode only).
For TC mode, you'll want to build a coil with a fairly low resistance, like 0.2 Ohms or so (ie - 2x0,4 Ohm dual
coils or 1x0,2 Ohm single).
You can use Steamengine to build virtual coils to see their characteristics (resistance, diameter, number of wraps, wire gauge and type, heat flux etc) before you actually build them.
For 24AWG SS316 wire (316, 316L, 317, 420?), a single 4-wrap, 2.5mm coil, 0,2 Ohm coil will provide 176 mW/mm² of heat flux @ 15W and should work in Temperature Mode as well.
