how do ice cream flavors work (and taste?)

do they use a bit of menthol or something for the cool effect, then mix in whatever flavor it is with it? Just thought of this and it kind of confused me.

I'm kind of curious about this too as I have also never tried them. I hear they have a sweet taste.
