Hi and welcome. Your tank uses GS Air coils. The battery uses direct output voltage, that is it is not adjustable. This means, among other things, the vape will be strongest (most vapor) with a freshly charged battery, and get weaker with each puff until the battery discharges to the point it stops working until being recharged. The difference in the coils tells you how much power (wattage) you are applying to the coil and thus how much vapor it will make. In general, the lower the number, the more power, the more vapor it will produce, the more juice it will use, and the faster it will drain the battery. I can not find any specifications as to the operating voltage but assuming it is using a single cell (1S) LiPo battery, it probably operates in the 4.2-3.5 volt range. Thus, the .75Ω coil will vary between 23.5 and 16.3 watts; the 1.2Ω coil between 14 and 10 watts; the 1.5Ω coil between 8 and 11 watts.

For your flavor question, it is harder to say. Try adjusting the air flow control to see if more or less flavor is noticeable with greater or lesser air flow through the coil. It might also be your juice is simply not very flavorful. Many of the cheaper and house brands skimp on the flavoring as it is the second most expensive component, after nicotine.
