I had some old juice I dumped out and it was way darker than it when I put it in the tank. It's not just from age either... I still have some of that flavor in it's jar and that juice is still a lot lighter than what I just poured out of the tank. Is this normal? I've never experienced it. I'm curious if I maybe burnt the juice?

Yes, this is normal. Some juices will get darker after being used in a tank for a while. Usually does affect the flavor of the juice, but if it does, just dump it.

Yep, overheat it and it burns. It actually will start on fire sometimes, but usually only if you ignite it with an open flame. Mesh wick users know this best of all.

Juice will darken just by the age of the coil used. If it gets too "caramelized" the juice will take on the color of "burnt sugar". I have a 50ml bottle full of the dark juice. It still is good, just not amber as when new. I just save it for those moments I get close to running out and need a emergency supply.
