I just ordered a large batch of DIY stuff, including two different cinnamon flavors, however neither of the cinnamon flavors really have a cinnamon flavor, nor do they have the eye-watering throat hit I'm looking for, does anyone have recommendations on flavor concentrates to get that cinnamon hit I'm looking for?
Looking for a really strong cinnamon flavoring.

TFA Cinnamon Spice will blow your mind in large amounts. It lacks the sweetness of Red Hot Cinnamon but has a real peppery punch.
If you want the candy type flavor then TFA Cinnamon Red Hots is the one.

I second the TFA cinnamon. Stuff is killer. At 5%, I find it's too much for any type of mix. It'll overpower most other flavors. I usually mix it at 1.5-2% I once mixed it by itself at 15% with only 5mg nic, and it definitely does have that eye-watering hit!
By far the strongest flavored juice I've ever vaped was an Atomic Fireball recipe that called for 7.5% Cinnamon Red Hots and 3% Cinnamon Spice. I used TFA flavors exclusively for this. All I can say is "YOWZA" when I vape it. Together, or on their own, these flavors should give you what you're looking for.
