Inspired by wllmc's Biscochito cookie recipe here http://www.e-cigarette-forum.com/forum/diy-e-liquid/569112-im-bored-want-cookie.html I'm working on a gingersnap cookie recipe. Thought someone might be interested in the progress and swapping notes, especially if you're working on one, too.

First of all, the same basic recipe for real cookies is called by different names. Gingersnaps, molasses cookies, and spice drop cookies all have very similar ingredients and methods. Only the balance of spices changes. So the result should end up being easily adjustable to make any of them. I'm imagining one of those flat cookies with a crinkle-top, crispy edges, soft center, sprinkled or rolled in sugar. OP, is that what you have in mind?

I have a few samples mixed, and had to try them right away. They all have cinnamon in there, so they'll have to sit a couple days to see how the spice balance develops. All are tasty now - just the spices aren't developed yet - so it's encouraging progress. All are sweet, rich, already gingery, with a great baked flavor. The exhale flavor from all of them is really delicious, but the tongue-taste on inhale is what develops as spicy vapes age, so.. I wait.

My notes so far, for anyone interested:

FlavourArt Cookie: around 2% is the bakery flavor and basic cookie. It's a rich base flavor for any kind of cookie.

TFA Molasses: all versions of all these real cookies use some molasses. This is an accurate flavoring but fairly light and mild, so it looks like I'll settle around 2% on this ingredient

FlavourArt Meringue: around 0.5-1% of this gives the impression of sugar-sprinkled coating. FA Cookie needs the sweetness. Sweeteners add aftertastes that I don't like in a vape, and they can lose strength or change the other flavors as they age/steep, so I use flavorings like this one instead.

Spices: I'm trying different combinations of Nature's Flavors Organic Ginger (around 1.5% right now) with smaller percentages of TFA Cinnamon Spice (cinnamon flavor), TFA Horchata base (cinnamon plus clove), FA Cinnamon Ceylon (very authentic ground cinnamon flavor), TFA Pumpkin Spice (EDIT: mostly clove with cinnamon, perhaps hints of nutmeg), TFA Holiday Spice (nutmeg and cinnamon, probably also best in spice-drops). I'll end up using just Ginger and 1-2 others, probably with options to sub with others for different kinds of cookies.

Possibly TFA Brown Sugar Extra: I use this in many other cookie recipes to give a 'baked' effect. But with the spices, it was just not working as well as Molasses, so I'll probably skip it entirely. Maybe it'll be part of the darker spice cookie version.

Anyone else working on spice cookies, molasses cookies, gingersnaps, or similar?

OLD-FASHIONED, SUGAR-SPRINKLED GINGERSNAPS
1.5% FlavourArt Cookie
1.5% Flavor Apprentice Molasses
0.5% FlavourArt Meringue
0.5% Flavor Apprentice Horchata Base (not Smooth Horchata)
0.5% Nature's Flavors Organic Ginger

For an extra-strength, spicier version go 2% on the first two ingredients, 0.75% on the rest.

This is sweet, spicy, with outstanding baked cookie flavor. There's the typical balance of spices you get in the real cookies, mostly ginger, lots of cinnamon, and some people will get the impression of clove from the Horchata Base. The vapor trail, especially with the extra-strength version, will have everyone looking for fresh-baked cookies :D Those spice flavors are strong, so measure carefully. This is a perfect match for my own grandma's gingersnap recipe, great vape!

I wanted to post this ASAP for anyone impatient (like I am). My variations are developing into Molasses cookies, Spice Drops, Bavarian Lebkuchen, and so many others, I'm going to write up a 'Spice Cookie Lab' to allow easy customization. Give me a day or three for that, and I'll post in this thread.

I've finished my SPICY COOKIE LAB! I put it in my blog (click Blog Entries under my avatar on the left).

It's a step-by-step, custom recipe builder for all kinds of spice cookies, including gingersnaps, molasses crinkles, Bavarian lebkuchen, spice drop cookies, and many more... If Granny's Sugar-Sprinkled Gingersnaps, Oma's Nutty Lebkuchen, Mom's Citrus Molasses Crinkles, and Granny's Boozy Spice Drops sound interesting, come take a look.
