If I am reading sites correctly then I am to assume that if I set my MVP to like say 6.5W and leave it, put a 1.8ohm coil on and vape till coil is no good. I then put a 2.1ohm coil on and vape away and no adjustment whatsoever is needed, correct? No need to adjust for the higher or the lower coil because the MVP will automatically adjust for you? So, this is like a set and forget kind of thing?

Yes, you get it right. The MVP,, in regulated power mode, reads the resistance of the coil first, then send the amount of voltage required to instate the power setting. So, your coil will produce 6.5 Watts indipendently from its resistance being 1.8 or 2.1 Ohm.
Regulated power mode can be more forgiving of voltage mode because it will compensate for resistance variations in the topper caused by dirty/wet contacts, and for the oxydation of the Ni-Cr wire endings - where it make contact with the internal side of the 510 (or eGo) connector.
