If you don't want to use Temperature Control, some Kanthal wire would be fine and probably cheapest. I don't know how huge that build deck is or what resistance coil, but steam-engine.org could probably be a help, there. If you want TC, then stainless steel is usually good, as you can use in temp or wattage mode. I'd say gauge-wise, somewhere from 24--28 gauge (again, each one will have a different mass and resistance, which is what steam-engine is for, to target your resistance).
If you want to get all fancy, you could get a coilmaster's kit or even just an ohm's reader to build on (it's a stable base) and to test your
coils after you wrap them, but that's far from mandatory, you CAN use your mod to read the resistance of the coil.
