besides the questions of gauge and availability:

it looks to be more recommendations in the direction of Kanthal?

Did I miss something?

some people prefer one over the other due to perceived flavor. i personally use both and cant taste a flavor from either. one thing to note is that nichrome runs slightly hotter / carries more electricity that kanthal. nichrome will represent 1 gauge larger than kanthal. for example, 26g nichrome will behave like 25g kanthal in terms of ohms/foot.

Some people have expressed concern regarding the nickle content in the Nichrome. being that the coils is "wet" it may not be a problem, but ....... The staffs of the Air Resources Board (ARB) and the Department of Health Services (DHS) have reviewed the available scientific evidence on the presence of nickel in the atmosphere of California and its potential adverse effect on public health. Based on findings of carcinogenicity and the results of risk and exposure assessment, the ARB and OHS staffs recommend that nickel and nickel compounds be identified as a toxic air contaminant.

So if you don't live in California, don't worry about this. Everything seems to be a little more cancerous there, or perhaps more cancerous only to its residents. :p

Kanthal is more ductile (less spring back) and as previously mentioned, runs a gauge higher in resistance compared to nichrome. Some folks complain of a more metallic taste with it, but I never noticed this. Either way, they perform about the same so just go with kanthal mainly because it is generally cheaper and easier to find the various gauges for a good price.
