Some folks (purists I suspect) appear to dedicate an atty/carto to specific flavors. Myself, I don't have a problem with mingling flavors. In an atty the previous flavor disapates fairly quickly unless it's something very potent like a cinnamon or clove then it could take a while. In a carto I kind of enjoy how you are getting 1 flavor and then a blending of the flavor that you have topped off with. Personal preference I suppose.

When sampling I just blow it out good between flavors, or not. It depends on the combination. When going from a strong flavor to a weak one I'll blow it out. When going from a weak flavor to a strong one I won't bother. There'll still be crossover and mingling of flavors, like the others have said, but that can lead to some good flavor combinations.

I usually have no problem using a one flavor after another. Last night I tried out a new flavor my wife had just bought- Cinnamon Bubble Gum. The cinnamon flavor was massive- that was the most flavor I have experienced. And when I switched to a different flavor, the cinnamon remained and just mixed with the next flavor. That cinnamon remained for the rest of the night. I didn't mind though because I was using flavors that the cinnamon mixed well with. But it really showed me that cinnamon hangs around for a long time
