I understand or have heard that if one has a vv/vw device like the innokin v3.0 that if you set the watts the device will adjust the correct voltage automatically. If this is true my question is how does one determine the wattage to set my Itastevv 3.0 on. Thanks. I am just confused at this. Thanx and happy healthful vaping...

That is correct. I would set the wattage to the lowest setting and work my way up until the flavor is just right. Let your taste buds be your guide.
In my experience, most vapers find their sweet spot somewhere between 4.5-8.5 Watts, depending on the eliquid and the topper being used. Tobaccos and coffees like a bit more heat (power) than delicate flavors like fruit do.
Like tmcase said, always start low and then work your way up until you like the flavor and vapor production.
