I just got one of those new Smart Carts (the ones with a removable plastic bridge not 2.0). They are amazing, but after about 5 puffs I would get a burnt taste. So I removed the cart and noticed that the filling got stuck to the atomizer (yup almost 0.5 ml of e-liquid spilled everywhere the moment the cart was removed).

So my question is, why is the filling getting stuck to the atomizer? and how can I fix this?

The filling needs to contact the bridge in the atomizer, so there is always the possibility that it may get stuck there. You can minimize that a little by making sure that there are no stray strands of fiber sticking out of the cartridge after filling. I always trimmed mine with a pair of scissors before using. The filler is probably not melting onto the bridge, but stray strands are getting stuck there.

Most use simple Boge 510 cartomizers for everyday vaping, the most popular cartomizers on 510 threaded devices. Slim 510 can use standard resistance which is 2.5 to 3 ohms (you will probably find the ones close to or at 3 ohms), and the big 450mah+ batteries like Ego and mods can use either the standard resistance or the hotter 2 ohm ones.

I find these work easiest with thin clear juices. I use 80PG/20VG or less VG and I avoid all dark/opaque/cloudy juices that drop flavoring sediment because that stuff gunks up a carto and bakes on the coil ruining everything - wicking, airflow, vapor production, flavor.
