Spearmint would be good as well as peppermint. Mints seem to have as many variations as caramels do in the flavor world.
I think honeysuckle would be great for those of us who remember tasting the flowers as a kid - awesome idea! (ah, to be so young again... except for the part where my uncle's dog dragged me through the honeysuckle hedge, man that hurt!)
