When I was growing up in South Louisiana, rice was the major food group. Boudin was just a subcategory of rice! Others in the category were rice and gravy, red beans and rice, chicken stew over rice, gumbo and rice, etc. Another major category was dessert. (I won't even name those entries or I'll just die of hunger and nostalgia.) Then there was the Catholic meatless food group.... I won't go into those (but it included something that my mother and grandmother called "chocolate sandwiches"....

Oooohhhh chimney, you would like eating at my house. We buy rice by the big sack and have it at least every other day!

Friday is our fried food day, usually catfish, homemade cornbread or hot water cornbread, some beans ... oh yeah!

I grew up on a small rice farm in SW Louisiana. My father and all of our neighbors were rice farmers. We usually had rice at least once a day. (twice a day on weekends!) I had already started school before I found out that some people put gravy on mashed potatoes!! I've got to be one of the weirdest Cajuns that you've ever met. I don't care for fish--especially catfish! But, at our house, we could really do a number on cornbread!! Red beans on cornbread, freshly cooked lima beans on cornbread, "crowded peas" on cornbread, black eyed peas on cornbread....YUM! And, later, in my thirties, I found out in north Louisiana the joys of "cracklin' cornbread"....mmmmmmmmmmmm!
