You want to make sure you're not inhaling directly when you're vaping - that'll burn your throat. It's more like taking a puff on a cigar or pipe, then inhaling it. I made that mistake at first.

Another possible reason is that the device you are using is running hotter than you can handle. If you let us know what you're using we can give you a little feedback about that.

It's also possible that the liquid you're using is either too high a nicotine level or uses a pepper base to simulate throat hit. If you have a milder juice it might help to move to it for a while.

Let us know a little more about what you're using and we'll help you figure it out. Hang in there!

All the above advice is good. If you look up my posts you'll find one where I mention that I got second degree burns on my tongue and throat for blu cigs. If you think you burned your throat, see an ENT to verify. If the catty, atty, whatever you've got at the end of your battery is getting hot, and the vapor is getting hot, no matter what, you stand a good chance of burning yourself. Electronic cigarettes are their own beast, and it's in your best interest to learn HOW to vape them. In my case, not believing I could possibly burn myself, it wasn't until after, that I finally realized the vapor that was coming out kept getting hotter and hotter as the vapes were longer and more repetitive, in effect, counteracting the benefit of a battery auto shut off. Of corse, this may not be what's going on with you at all, then again, it could be. By the way, I've had hot juice spit out into my mouth from a boge carto at high voltage, because of the aggressive if not gluttonous (I admit) way I was drawing on it rather than taking a slower more deliberate draw which works so much better with electronics vs analogs.

Ditto on the lots of water, for sure!
Also, if you've quit smoking and are now only vaping, sore throat + cough is a side-effect of quitting smoking, independant of vaping.
Some people are sensitive to the PG (propylene glycol) that is used in most juices although I'm not sure if that manifests in sore throats. PG is very drying, which is why the recommendation to keep hydrated is important.
Here's a list of side effects you may encounter when switching from smoking to vaping:
