If you like subtle flavors and you DIY, get some acetyl pyrazine(AP). At low percentages it gives an unflavored mix a little earthy kind of undertone. If you like the taste, you can go higher. Neat stuff.
It sounds to me like you like you could be having one of two different issues:
1) You could be totally correct that subtle flavors are what works for you. If that's the case, I'd recommend ordering a sampler from Carpe Diem vapors. This stuff is very well reviewed and they state on the website that they prefer subtle flavors and mix their line that way. Honestly, I wasn't the biggest fan of their juice for that very reason - the flavors were good, but I wanted more in most cases. Could be right up your alley.
2) It could also be, as you mentioned, that you haven't gotten the quality you're looking for yet. If you like Grant's Vanilla Custard and it's the first "good stuff" you've tried, then maybe you should check out some of the better juice brands. I really enjoy Nicoticket, Ahlusions is very highly regarded here (and I'm waiting for my first order from them to try it out), and people rave about five pawns (but they're a little expensive).

I realize that a lot of people in the new member area are completely new to vaping but when you get the feel for it consider making your own juice. Its really simple and the cost savings is crazy. Wizard labs comes to mind as they have tons of flavor concentrates and you can buy your base liquid with or without nicotine to your desired concentration.

I just prefer a good quality VG base liquid as my ADV..
Apart from the big bottle of Grant's Vanilla Custard (great stuff) there are several others that I like very much, such as my bottles of the classical Boba' Bounty, Mewlew's Magic from VCV, Cinnamon Cookies from AtmosLab, and I could mention some more.
But I just don't like these flavours all day long. I think unflavoured base liquid is great! To me vaping is not only about flavour (at least this was not the reason I was smoking for so many years), but about the feeling of inhalation and throat hit, the warmth and texture of the vape, the crispy sound of a well-wrapped coil.. and of course the nicotine itself no? For me the aspect of e-liquid flavourings receives a bit too much attention in this world. There are so many great flavours in my food already. Why do we need flavours in our liquid? At least it is not where it all started with (for the most of us)..
So I happily fill my gear up with some nice base liquid everyday, nice and neutral to the palate, and once in a while I fill it up with some strong but good quality flavour. This is how I like it at the moment.
You should definitely try mixing your own juice... I'm told ethyl maltol makes for a good sweetener. Maybe your steamy straight-vg experience would be improved with a small touch of sweetness in there?
If you happen to wander over to Paris, I am dying to try these. They look amazing. If expensive.
