What I've read vw is a set and forget. You pick the wattage and it atomaticlly adjusts your voltage to the ohms of your atimizer. The vv is for more fine tuning. I think the modes are "one or tbe other" you either run in vw mode or vv mode, not both at the same time.

So I just got my evic and I was wondering which mode is better VV or VW??

It depends on your personal preferences. Variable Wattage mode is easiest as all you have to do is set the eVic for whatever wattage you like to vape at, and the eVic will adjust the voltage according to the resistance of the atomizer of your delivery device. With Variable Voltage you can control the voltage level to get the desired vape from your atomizer. The drawback is that if you switch atomizers and the new one has a higher or lower resistance, then you have to readjust the voltage for the new device.

There is also a mode setting and when you pick auto and it says 3.0s, which I am guessing is 3 seconds, but what is that for?

Normally with the eVic as long as you hold the fire button down it applies power to your atomizer coils. This setting will apply power to the coils for the period it is set for and shuts off. Once started it then doesn't matter if the fire button is held down or not.

There are too many variables to give a good recommendation. First you'd have to consider what kind of juice you are vaping, then the resistance of your coils, and the biggest is personal preference. What works for me may not work for you. The best advice I could give is to experiment and find that sweet spot yourself. Just start out in VW mode at a low setting and try it, and then bump it up a notch or two till you find what works best for you.

Good response on the difference between using variable voltage or watts settings.

As far as the tanks? They are more similar than not in performance although I prefer the Kanger Pro Tank 2 b a small margin.

They both have pretty similar vaping characteristics so I doubt that a given ejuice flavor will vape much differently from one to the other.
