I think a good place to start is looking at recipes for drinks and food and basing combinations from that.
In general I'd just like to see more unusual combinations than are currently offered, and more complexity.
I was thinking about something like the awesome green curry sauce they make at this Malaysian restaurant near me, it smells and tastes so great. Maybe some kind of mix to approximate that, something with coconut, lemon grass, lime, galangal, coriander, Kaffir lime leaf, and Thai sweet basil. (Like a green curry sauce without the onion, garlic and chilies).
I just went to the coffee shop and got a hot chocolate with lavender flavor added. Their chocolate isn't very chocolatey, but still good. It inspired me.
So how about a creamy base, not too sweet, with white and dark chocolate and then either lavender, rose, or even a teeny bit of patchouli.
A ginger & rhubarb would be nice, with a splash of citrus, or maybe with some cream
