... How do you deal with the previous flavor that is still in the atomizer? I mean, the drip tip is easy to wash off in the sink. But how about getting rid of the flavor in the atty? I have menthol in mine now but want to try the other flavors I got when I ordered my e-cig.

Do you just add the new flavor to it and wait for that old flavor to eventually vape away?

Menthol and strong cinnamon flavors are difficult, if not impossible to get out of an atty. You can try giving it a soak in 91% Isopropyl Alcohol for about 15 or 20 minutes. It might help and it might not. Usually people just dedicate an atty to those flavors.

With other flavors I'll just blow out the atty or vape until the flavor drops off and add the new one.

I can only vape mentholated flavors in a dedicate atty or carto. Menthol ghosts something fierce. So do fruit flavors, but nothing like menthol. I use dedicated atties for creamy/tobacco/dessert/coffee flavors, fruit flavors and mentholated flavors. If you only have one atty you can either tempt fate, drip and see if the new flavor doesn't gradually cover the previous. That is if you don't want to wait to soak one and let it drain over night. If the need is urgent. If you are about to go to bed and won't be vaping again until the morning, you can rinse it out, blow the excess water out of it and let it drain inverted on a paper towel over night. When you go to vape again, give the atty a dry burn. Attach it to your battery, let it heat up for about three seconds while gently blowing into the atty, wait fifteen seconds and repeat. Do this a few times. Then I remove the atty, drip about five drops in, gently blow the excess out into a tissue, add one more drop then you're ready to go. The first few toots may be a bit warm and lacking in flavor, but keep vaping and keeping the atty juicy.

Some flavors really stick - ginger, spices, some peppery tastes. And I heard chili flavor is almost impossible to get out (it's probably an oil-based flavoring)

I actually set up 2 PV's at night - my tobacco PV where I also sometimes add in tobacco compatible flavors like vanilla, chocolate, almond, caramel. And my fruity desserts PV (KR8 w/ 901 atty) and I never put tobacco flavors in that one. So I don't mind a bit of flavor mixing that way, though once I use ginger ale or my spiked eggnog w/ nutmeg I just live with the ginger or nutmeg for a while so I put in a compatible flavor.

If I needed to get flavor out I would probably use vodka or grain alcohol so it would dry fast. I'm wary of plain water on electric things and metal.

Just like the above posters I usually have different atties dedicated to tobacco flavors, fruit flavors and desert flavors. When I switch flavors on one of them I blow out whatever is left in the atty, then add 3-4 drops of unflavored 0 nic PG, then blow it out again.

This only works on relatively mild flavors though, if the flavors are strong you are going to have to run some water through the atty. Every couple of days I put my atties in a glass w/Efferdent Denture cleaner for an hour, then rinse them with hot water. It is a bit of bother, but for me it is worth it to have fresh atties to drip on.

Put in some REALLY hot water (like it just finished boiling) for about 10 mins. Pick up, blow out, and do it again, about 3-4 times. I used a fruit flavor I HATED and did this. Got rid of it.

You have to let the atty fully dry tho...24 hrs, OR blow it out with a hair dryer. Then prime it with a few drops of the new liquid, blow out, then fill and vape.

It's easier just to use a designated atty. LOL

You can speed up the drying process if you have access to compressed air to blow through the atties. Then after that I use Highping's dry burn method to finish drying them and burn off any residue.
Use that at your own risk though. I have popped at least one atty dry burning, but that was only the one time out of many dry burns.
