why do juices have to be stored in a dark place?

Ok, I get storing them in a cool place, but why does it have to be dark? Does light have an effect on it? I just got some juices, gonna let them steep for a week, but I tried them right out of the mail and some of them have a peppery taste that I find unpleasant. I've never gotten a peppery taste from juices I've tried before, so I'm just wondering if that will go away with steeping?

Nicotine oxidizes when exposed to UV light which causes it to turn brown. If you're interested in the chemical process check out this article. I've received juice from a couple of vendors with the peppery taste you describe. Several weeks of steeping solved the problem.

Based on my experiences with the nicotrol inhaler and nicotine gum, I think nicotine itself has a peppery taste, so it would make sense that you need to steep the juice for a while to allow the flavor to come together.
