Question about "stomas"

I figured this was the best place for my question, if it needs to be moved then please move it.

I was just curious why a person needs a hole in their throat after having their voice box removed? Apparently it's so they can breath, but why can't they breath without a hole in their throat? Is the throat surgically closed off or something after the voice box is removed? And if the throat is closed off, then how do people eat, drink and do other things that come into their body from their mouths?
