    Actually, no, they're to prevent the juice from autofeeding, which is a possibility in higher temps, although, personally, I've never had the issue, even in 100+ temps.

    I usually get mine from Temco (link) but you can also buy from amazon or ebay. I'd recommend Kanthal A1, in whatever gauge you prefer. It's quite cheap direct from Temco.
