I know it is bordering on blasphemy, but I made baked eggrolls a few nights ago and they were pretty darn good. Even used ground turkey instead of my usual pork loin or shrimp. Roll them up as usual then spray a sheet pan with Pam, lay the eggrolls on the pans and lightly spray them with Pam too, then bake at 375 for about 17 minutes.
