Last night we had...get ready for it....cereal. My body & mind went into exhausted melt down. Tony the Tiger to the rescue. LOL.

I haven't had McDonalds in years - literally - but a Big Mac sounds really good. Their fries are the best!

Tonite my son and I will be having T-bones and artichokes with melted butter and garlic. Bet money that he won't even try the artichokes. They're green.

Rave , forget the fries..since everyone when to the new type of oil..they all taste yucky!

Last night my son and I made meat and also fruit Empanada's and my daughter made Papas Rellenas(stuffed potatoes). My G'sons also made Tres Leches pound cake (3 milk). I am not cooking or moving today! :)
OK for those of you not into Spanish cooking:

Stuffed potatos: You can stuff the potatos with whatever mixture sounds good to you!

Empanadas..but we use a goya empanada pastry. It's just a short cut. You can make your own dough or use biscuit dough. Also any filling is good! We did picadillo and a few with guava and cream cheese, but you can do pork, BBQ, any fruit, chicken ect.

Tres leches cake (3 milk cake) The picture above is not a pound cake..but it gives you the idea, ours had tons of toasted coconut on it!
We cheated and used this Sara Lee pound cake recipe instead of making a cake then doing everything else to it.:
